Oven Omelet Roll October 15, 2011

Ingredients:

  • 1 cup milk
  • 1/4 cup cornstarch
  • 10 large eggs
  • 1 tablespoon Dijon mustard
  • salt and ground pepper
  • 3/4 cup cooked ham, sausage, or bacon
  • 1 1/2 cups shredded cheddar

Preheat oven to 350 degrees. Line bottom of a jelly roll type pan with parchment paper, leaving a 1-inch overhang on the two shorter sides. Grease parchment paper. Do not skip the parchment paper on this recipe. You need it to roll the omelet.

In a bowl, whisk together milk and cornstarch. Add eggs, mustard, 1 teaspoon salt, and teaspoon pepper; whisk to combine. Pour into pan. Sprinkle meat over top in an even layer.

Bake until edges of omelet are set, 15-18 minutes. Sprinkle with cheddar; bake until cheese has melted, 2 to 4 additional minutes.

Beginning at one shorter end, lift parchment, and roll up omelet

peeling back parchment as you go.

Slice and serve

Crispy Baked Chicken Divine

Crispy Baked Chicken Divine

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Yield: 12-15 servings

Ingredients

  • 5 lbs chicken breasts,
    sliced in half horizontally or pounded thin (about 3/8″)
  • 3 – 4 Tablespoons  Seasoning
  • 2 cups sour cream
  • 1 (8 oz) pkg. Italian Bread
    Crumbs
  • 1/2 cup butter (one stick)

Instructions

  1. Place the chicken breasts on ungreased baking sheets.
  2. Sprinkle each piece liberally with Seasoning.


3.Spread sour cream over each seasoned chicken breast.

4.Sprinkle with Italian Bread Crumbs.

5.Cut stick of butter into small cubes and dot over chicken breasts.


6.Bake at 350 degrees for 35-40 minutes until chicken is done and
crumbs are nicely browned.

Homemade Honey Butter Biscuits

I made homemade biscuits today for breakfast. I added honey to the recipe(off a Jiffy box) and glazed the tops with honey butter (homemade) the last 2 minutes of cook time. They came out so pretty and super yummy!

I made extra so the kids ate about 4 and hubby had 5 or 6 for breakfast. Then I froze the rest. Enough for 3 breakfasts for the kids during the week and some for hubby to take to work to snack on or eat at lunch.

Hubby said they came really close to tasting like Churches Chicken biscuits, that he LOVES. LOL.
